Phytochemicals, including catechins in green tea and flavonoids in berry fruits, can positively influence health when regularly incorporated into the diet. Using analytical tools and animal models, my research aims to evaluate factors across our food system - from farm to table to health - and their effects on the bioavailability and health benefits of dietary phtyochemicals. The Whole Health Consortium's mission to impact health and well-being through a range of health behaviors, including diet, are well-aligned with my research goals.
